I never know what to have for lunch. So when I find something I like, I eat it every single day.
A few weeks back it was all about BLAT's. Bacon. Lettuce. Avocado. Tomato. On toasted rye bread, or in a whole wheat wrap.
Now, it's all about chicken salad. And as I was making it yesterday I thought, "huh, this needs some crunch, and NOT from celery". So then I added some apple. Oh my. So good.
Here is the recipe for my Chicken Apple Salad Sandwich:
1/2 cup of leftover roasted chicken, diced
1 Tbsp of mayo
1 tsp grainy mustard
1 or 2 Tbsp of diced apple (Granny Smith would be best, but I used Gala)
3 slices of avocado
A few leaves of lettuce
Rye bread or Whole wheat wrap
Mix diced chicken, apple, mayo and mustard together.
Slather it on a piece of toasted bread or a wrap.
Slice up some avocado and lay it on there.
Add some lettuce and voila!
